Chili Honey Salmon with Basil Chimichurri

Description

Roasted salmon with a chili honey rub and drizzled with a basil chimichurri sauce.


Ingredients

  • 4 6-ounce salmon filets
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 tablespoon honey
  • Zest of 1 lemon
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 cups fresh basil leaves
  • 1 cup fresh cilantro
  • 2 garlic cloves
  • ¼ teaspoon crushed red pepper
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Combine the paprika, chili powder, honey and lemon zest in a small bowl. Season the salmon well with salt and pepper and then rub the spice mixture all over.
  3. Line a baking sheet with foil and place the salmon on. Bake in the oven for about 12-15 minutes until cooked through. 
  4. Meanwhile, add the olive oil, red wine vinegar, basil, cilantro, garlic and crushed red pepper flakes to a food processor or blender and pulse until combined. If the chimichurri looks too oily, add more herbs in until your desired consistency. Season with salt and pepper.
  5. Serve the salmon with the chimichurri sauce drizzled on top and enjoy!
