You know those days when there just doesn’t seem to be enough time (or maybe motivation) to get everything done? Those are the kinds of days I find it hard to keep things healthy at dinnertime, and I’m really tempted to just order some pizza to be delivered directly to my couch. So I love recipes like this herb crusted salmon that are sooo easy and also healthy for those busy weeknights!
This recipe literally takes 15-20 minutes max, but that doesn’t mean it doesn’t pack a ton of flavor. Fresh parsley, pine nuts and panko are mixed together with dijon and lemon juice for a delicious crust on the salmon. Bake it up and you’re done!
If you’re not a dijon fan, not to worry as it blends in with the other flavors, but you always can use less or use a stone ground mustard if that’s more your jam. I also like to keep this simple with just parsley, but you could mix in other herbs like basil or dill to keep things interesting.
What to Serve with Herb Crusted Salmon
This salmon is great with just a simple salad or some rice and sautéed veggies like green beans or zucchini. But I love this with my Spring Vegetable Couscous Salad! The Mediterranean flavors go great together, and it’s also a super easy, simple recipe – perfect for that crazy (or maybe just lazy!) weeknight.
Wine Pairing
Grenache Blanc: This is a full bodied white wine that can hold up next to the mustard flavor in this salmon. It also pairs well with fresh herbs and citrus, so a great fit all around for this dish. If you can’t find Grenache Blanc, a Chardonnay would be a great alternative.

Description
A simple to make baked salmon with a parsley, pine nut, lemon and dijon crust.
Ingredients
- 4 six ounce salmon filets
- ½ cup panko bread crumbs
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- ½ cup fresh parsley (chopped)
- 1 tablespoon dijon mustard
- ¼ cup pine nuts
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees
- Mix together panko, olive oil, lemon juice, parsley, basil, dijon and pine nuts in a small bowl.
- Place salmon on a rimmed baking sheet lined with foil (skin side down if your salmon has skin). Season salmon with salt and pepper.
- Top each filet with a quarter of the herb mixture, pressing to make it stay.
- Bake salmon for 10-18 minutes depending on the thickness of your fish. Remove from oven and enjoy while warm! Goes well with a spring vegetable couscous salad or sautéed vegetables and rice.
