Herb Crusted Salmon

Description

A simple to make baked salmon with a parsley, pine nut, lemon and dijon crust.


Ingredients

  • 4 six ounce salmon filets
  • ½ cup panko bread crumbs
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • ½ cup fresh parsley (chopped)
  • 1 tablespoon dijon mustard
  • ¼ cup pine nuts
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees
  2. Mix together panko, olive oil, lemon juice, parsley, basil, dijon and pine nuts in a small bowl.
  3. Place salmon on a rimmed baking sheet lined with foil (skin side down if your salmon has skin). Season salmon with salt and pepper.
  4. Top each filet with a quarter of the herb mixture, pressing to make it stay.
  5. Bake salmon for 10-18 minutes depending on the thickness of your fish. Remove from oven and enjoy while warm! Goes well with a spring vegetable couscous salad or sautéed vegetables and rice.
