Description
A simple to make baked salmon with a parsley, pine nut, lemon and dijon crust.
Ingredients

- 4 six ounce salmon filets
- ½ cup panko bread crumbs
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- ½ cup fresh parsley (chopped)
- 1 tablespoon dijon mustard
- ¼ cup pine nuts
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees
- Mix together panko, olive oil, lemon juice, parsley, basil, dijon and pine nuts in a small bowl.
- Place salmon on a rimmed baking sheet lined with foil (skin side down if your salmon has skin). Season salmon with salt and pepper.
- Top each filet with a quarter of the herb mixture, pressing to make it stay.
- Bake salmon for 10-18 minutes depending on the thickness of your fish. Remove from oven and enjoy while warm! Goes well with a spring vegetable couscous salad or sautéed vegetables and rice.
