Pasta with Sausage, Mushrooms and Spinach

Description

A simple and easy pasta with healthy and fresh vegetables, flavorful sausage, a touch of spice, and a buttery white wine sauce.


Ingredients

  • ½ pound orecchiette or cavatelli pasta
  • 2 tablespoons extra virgin olive oil
  • 2 links sweet turkey sausage (about 4 ounces)
  • 1 cup mushrooms, sliced
  • 3 cups fresh spinach
  • 1 large shallot, finely chopped
  • 3 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 ½ cups dry white wine
  • 3 tablespoons unsalted butter
  • ¼ cup grated parmesan

Instructions

  1. Bring a stockpot of water to a boil and season with salt. Add pasta and cook until al dente. Drain the pasta but save ¼ cup of the pasta water.
  2. Meanwhile, heat olive oil in a large pan over medium-high heat. Add sausage and brown on all sides while breaking it up with a spoon.
  3. Add the shallot, garlic and red pepper flakes and sauté for 2 minutes. Add the mushrooms in and sauté until the sausage and mushrooms are cooked through, about 5 minutes.
  4. Pour in the wine, bring to a simmer, and cook until the wine is reduced by half.
  5. Add in the cooked pasta and spinach. Stir to combine until the spinach is wilted. Turn off the heat and mix in the butter, parmesan, and some of the pasta water until butter is melted and the sauce is creamy. Add in the rest of the pasta water if needed. Enjoy!
